A Journey from Harvest to Olive Mill

The oil mill is central to the whole production process: it is where olives are transformed into high-quality extra virgin olive oil. As the olive oil industry has evolved, technology applied to mills has played a crucial role, enabling more efficient and sustainable production without compromising quality.

From Traditional to Modern Mills

Traditional mills used stone grinders, a slow but careful process designed to preserve the oil’s sensory properties. Modern mills, however, rely on advanced mechanical systems that reduce processing times and improve control over production parameters.

This type of mill allows olives to be managed quickly and precisely, guaranteeing a fresh oil rich in aromas and essential nutrients. Speed is crucial, because immediate processing after harvest helps preserve flavour and nutritional qualities.

ArteOlio® has invested in a technologically advanced mill located in the heart of its olive groves. This logistical choice reduces olive transport times, ensures the freshness of the final product and reduces its environmental footprint while also lowering CO₂ emissions.

The Importance of a Modern Olive Mill

For farms, owning a modern mill is a major competitive advantage. An in-house mill makes it possible to process olives as quickly as possible after harvesting, preserving their sensory properties and the final quality of the oil.

It also allows full control over production, guaranteeing high hygiene standards and monitoring every stage, from the arrival of the olives to bottling.

ArteOlio’s mill represents a strategic advantage as it allows us to process in house 100% of our olives and to control every step of the production process from field to bottle, with high hygiene standards.

Olive Mills and Sustainability

Modern mills are designed not only for quality, but also for sustainability. Advanced technologies reduce energy consumption and optimise resources. At ArteOlio, the mill is equipped with a 100kw photovoltaic plant that produces most of the energy needed in the oil extraction process. The milling process is fully circular, as all byproducts – pomace and kernels – are used to produce renewable energy and as natural fertiliser.

For ArteOlio®, owning a mill represents a strategic advantage. It allows the company to control the entire production process, from harvesting to bottling, ensuring quality, traceability and an approach aligned with the expectations of evolved markets, where extra virgin olive oil is seen as a symbol of excellence and care for the environment.
